Tagliatelle with oregano – pasta made of durum wheat semolina
Oregano tagliatelle are a tasty alternative to the simple and better known tagliatelle. The pasta quality combines with the unique taste of oregano.
Tagliatelle are a traditional kind of pasta from Central and Northern Italy. Their name derives from the verb “tagliare” (“to cut”), as they are obtained by rolling out the dough into thin sheets and cutting it after rolling it up.
This type of pasta is obtained by mixing the best durum wheat semolina, water and oregano powder. This explains the typical dark colour of these oregano tagliatelle.
The semolina is characterized by a high protein index, low ash content and a golden yellow wheat colour so as to guarantee a pleasant taste to the finished product.
Drying is static, it occurs at low temperatures and it’s over a day long.
