Organic orecchiette, or simply orecchiette, are a type of pasta typical of the puglia and Basilicata regions, the shape of which is roughly that of small ears, from which the name derives.
Hard wheat semoth paste, like organic orecchiette, is produced with a mixture of grains chosen to ensure a product with high nutritional value and with optimal cooking seal.
All the processing fully responds to the traditional methodology, with cold dough and bronze drawing, in order to obtain a pleasantly rougher and porous paste, ideal to absorb and enhance the sauces.
Drying is carried out at low temperatures and long times, without damaging the valuable contents in the organic orecchiette of hard wheat.
